some lovely person posted a recipe for coronation mushroom on here and the only checks you need to count are for the light mayo! made it today with mushroom and 50g of quorn so that amounted to a whole 4 checks and it was so Yummy! defo recommend it! and took minutes to make! x |

Can't remember but all you do is soften the mushrooms in some spray oil then add them to a tbsp of light mayo and some curry powder. You only need to count your mayo!I've done it with quorn pieces and tuna too! It's delish!! Enjoy xx
