lipsmacking.gif Just found this recipe out of one of my old SS magazines yesterday and thought I'd share it with everyone as I am going to try it tonight. I always think soup is great "comfort" food on these cold days and when your trying to fight all the bugs flying around it helps too.
So here goes ......

You will need :

1 onion, chopped
3 carrots, sliced
1 stick of celery, sliced (although I don't like this veg so if you don't either you can put in more carrots or some other veg perhaps thats lurking in your fridge !)
115 g/4oz brocolli, chopped
600ml/1 pint chicken or vegetable stock
300ml/10 fl oz The One 1 per cent fat milk, (I'll just be using semi-skimmed milk as I son't have this in, will be a bit extra checks though)
Pepper
4 level tbsp half-fat creme fraiche, (if you've got it, if not don't worry just omit it).

(By the way, this serves 4 and is only 2 checks per bowl !!!)

Method:

It says: 1. Place the onion,carrots,celery and broccoli in a large saucepan together with the stock. Personally, I would fry the onion in a little low fat spread first, then I would put all the rest of veg in the pan with the stock. I think this would make it tastier.

2. Bring to the boil, reduce heat, cover and simmer about 10-15 mins until veg is tender.

3.Crush the veg into the stock with a potato masher.

4. Stir the milk into the soup and heat through gently. Do not allow to boil. Season with pepper to taste.
5. Serve quarter of the soup to each person and stir one level tbsp creme fraiche into each bowl, (if got).

And ENJOY !

mmmm lovely, will try this myself. I LOVE homemade soup and think this time of year is brill for that reason 2thumbs.gif

biggrin.gif Hi Louise, got it on as I speak. It smells lovely I have to say. I am going to add a little rice to it, just to give it more substance. And it would be nice with a little garlic bread (low calorie stuff), if you had it in. I've some in my freezer but it out of date unfortunately so me and my son will just have a couple of pieces of toast with it instead for t. x

Forgot to mention, although the recipe doesn't say to add salt, I have. Its a bit bland in my opinion without it. Tastes lovely now. mmmmm. x
