lipsmacking.gif Hi folks, just made a sausage casserole for tea and it was lovely as well as very filling. I thought I would share it with you. Its a mix between the sausage casserole in the PEP book and the ss Seasons book. So here goes, I hope you try it and enjoy!

To make for 2 people, (16 checks, using 6 checks per sausage, would be less if can get lower checked sausages, like SS ones or Walls) :-

6 low fat sausages
tin of chopped tomatoes with garlic
1 clove of garlic
1 tablespoon of tomato puree
1 tablespoon of splenda, (put in a little at first, as I like this amount but might be too sweet for others).
4 carrots
1 large onion
mushrooms, (optional).
1 tin of cannellini beans, (or haricot or butter beans, makes no difference).


What to do :-
1. Grill the sausages, (I like to spray the light fry spray over them).
2. Fry the onion, mushrooms, (if having any), and crushed garlic in a saucepan, (I grate my garlic), for about 5 mins.
3. Add the carrots fry for a few mins, then add the tinned tomatoes,beans, puree and splenda.
4. Put on a high heat, then put in one chicken cube and stir until dissolved.
5. Lower the heat, then slice the sausages that have been cooked under the grill.
6. Add the sausages, put lid on the pan and simmer for about twenty minutes.
7. Dish out onto plate and enjoy ! lipsmacking.gif

Sounds delicious Catrina lipsmacking.gif but don't you get awfy smelly fingers when you grate garlic laugh.gif

biggrin.gif Hi Audrey, yeah fingers do get garlicky, just have to give them a good wash. Worth all the effort though. Luv, Catrina. x

Just checking the checks ...Did you make it for 3 and have two sausages each? 3 sausages is 18 and then the beans would make 22 or if was for 3 then would be a little less than 16? Sorry to be a pain but am going to try this as sounds yummy xx I am in stew and soup mode. Had carrot and coriander no check soup today and made a stew to have tomorrow. Only good thing about the cold weather lol

biggrin.gif Hi Debs, I was a bit naughty and had three sausages each for my son and me. But your quite right, if you had two sausages each then it would be 16 checks.

If you follow my recipe however this would do three smallish kind of portions or if you wanted just add 4 sausages and this would do 2 quite big portions and the same checks. Hope I haven't confused you any. Luv, Catrina. x
