CHERRY ROCK CAKES
makes sixteen - 155cals each
You need:
250g self-raising flour
2tsp baking powder
125g butter, cut into small pieces
60g soft brown sugar
85g glace cherries, quartered
60g currants
1 large egg, beaten
3tbsp skimmed milk
Method:
1. pre-heat the oven to 200c/gas mark 6
2. sift the flour + baking powder into a large mixing bowl and rub in the butter until the mixture resembles light breadcrumbs
3. stir in the sugar, glace cherries and currants, and then mix in the milk to form a slightly sticky dough
4. grease 2 baking trays, and drop 16 spoonfuls of the dough on to the prepared trays
5. bake the rock cakes in the pre-heated oven for ABOUT 15 mins, until well risen + golden brown
6. cool the rock cakes on a wire rack + store in an airtight tin
I had one when freshly made and still warm - mmmmmmmmmmmmmm
