Given the traditionally high calories content of pastry you might struggle for a low cal verison, obvisously you could adapt your normal recipe by using low fat butter etc but you would need to do the sums, alternatively buy one in a box already calculated lol or.....maybe compromise and try this.

Quick Apple Crumble

Serves 1 - 4cx

Core and peel a small apple, slice into 8 wedges, crush 1 low fat digestive biscuit and add to 1/4 tsp of mixed spice. Arrange apple on a small oven proof dish and sprinkle with biscuit mixture. Bake in a medium oven for 10 mins or microwave for 3 mins.

I use McDougall's crumble mix - that way it's easy to vary the amount and I always use twice the normal amount of fruit.

Crumbled lotus biscuits go well with fruit so you could give your family pie and add some lotus to baked apples.
