Full Version: Cajun Vegetable Risotto

I make this quite a lot as I love rice and a bit of spice! So I thought I'd share it! smile.gif

85g Easy cook long grain rice = 12 cks

1 small red onion = 0

3-4 mushrooms = 0

1 small or 1/3 or a large courgette = 0

1/2 Red pepper = 0

1/2 chicken stock cube = 0

3/4 pints of boiling water (approx) = 0

1 clove garlic = 0

1 tsp cajun seasoning (Julian Graves) = 0

2 rounded dsp low fat creme fresh = 4

1 dsp tomato puree = 0

Chop all the above veg and garlic and place in a pan with the rice. Dissolve stock cube in 1/2 pint of the boiling water. Add to veg and rice, add half a tsp of the cajun spice, cover and cook on a medium heat stir every few minutes to ensure it doesnt stick. After about 10 minutes add in the tomato puree, mix thoroughly. By this point you might need to start adding a bit of extra water. Keep stirring and adding water until the rice is cooked and all the liquid has soaked up. Add in the rest of the cajun spice to taste - its very spicy so you might not want to use a whole tsp. Then mix in the creme fresh and serve.

N.B. I love garlic and use 2 cloves but I know not everyone is the same so have cut it down to one, you can add to your taste.

This is quite a versatile receipe and you can really use any veg you want, even add in a few prawns or something make it a bit different (remembering of course to count in your checks!). But I love the flavour of the cajun seasoning and I could eat this everyday!
