Full Version: Sashwan Chicken (sp?!)

My husband loves the sashwan (sp?!) chicken out the chinese so I have concocted a low cal version to keep him happy.

100g chicken breast (thin slices) = 4
100g pineapple (chopped) = 2
Half green pepper
small onion
3 mushrooms
2 spring onions
garlic
heaped tspn tomato puree
heaped tspn tomato ketchup
dash soy sauce
half tspn chilli powder (mild - med)
1/4 tspn ginger powder
75g rice = 10

Stick the rice on to cook - the other bit cooks quite quickly.

Brown off chicken with some one cal spray and dash of soy sauce, add all the chopped veg except spring onion and pineapple, on a highish heat, add chilli powder, garlic and ginger. Cook for about 5 minutes, stirring now and again to make sure it doesnt stick. Add the puree and ketchup, cook for a further few minutes, now add the spring onion and pineapple, give it another few minutes stirring continuously now. Serve with the rice.

Yes sorry I didnt put that down - Serves 1 and is 16 checks or 14 using EDB, when I make it for me and hubby I just double up quantities. smile.gif

Its kind of sweet and sour but with the chilli (which makes it the sashwan and not jsut plain sweet and sour) its not as tangy or spicy as you'd get out the chinese - I am not a fan of sweet and sour either unless I have made it, then I can control how sweet and sour it is. If you prefer it less sour - use less ketchup - that was really put in when I concocted the recipe as I didnt have any vinegar, or heat stable sweetner, so the kethup was a perfect substitute.

thanks rosie, i hate tomato ketchup so wouldnt miss that, will maybe make it for hubby and have a wee taste, thanks 2thumbs.gif

Ok in that case, omit the ketchup, and add another tsp of puree, and add about 1 tsp of granulated sweetner (trying to balance the sweetness with the chilli, the hotter you like it the more sweetner I'd add). The taste of the whole dish will be more of a sweet chilli flavour, rather than the sour flavour of the vinegar.

Have had this twice now and it was delicious! Have told Rosie so on PM a while ago. I would recommend everyone try it. x  lipsmacking.gif .
P.S. I put in a couple of tablespoons of Splenda, (check free sugar equivalent), as I like my things a bit sweeter, but could try it with/without depending on your personal taste.
