Just thought I'd share this soup I threw together tonight - very easy.
Ingredients:
1 sachet miso soup paste (18 cals I think - not sure if miso is free or not...will have to find out)
1 knorr veg stock cube
1 nest of noodles (I get mine from the Chinese supermarket and they are 6 checks per dried nest)
50g frozen large prawns (2 checks)
50g cooked chicken (I used less as only had a few bits left) (2-3 checks)
half pack of stir fry mix (I used one from Tesco that had pak choi, courgette, carrot, bits of lemongrass and baby sweetcorn)
dash soy sauce (optional)
In a saucepan I put the miso paste and stock cube and added about 500-600mls water (add water to your taste). I simmered until all dissolved then added the stirfry mix (ripping up the pak choi in smaller pieces), simmered again until vegetables were semi tender. I then added my dried noodles and when they are almost done, add the prawns and chicken. Simmer a few minutes until the noodles are tender and the prawns are warmed through.
I also added a few chili flakes and a dash of soy sauce at the end. It made a huge bowl of soup and is very filling.
