At the moment I've replaced all potaoes with Butternut squash (as it's check free and does everything a potato does

) but I need new ideas on what do do with it.
So far I make soup and stick it on top of every pie I make instread of potato of pastry.
I need inspiration... HELP!!!

Try roasting bn squash with red onions and carrots for a delicious side.

CHIPS!! cut into chunks and roast for about half an hour/ 40 mins - delish served with a bit of salt and vinegar - you need never buy chip shop chips again!
also delcious boiled and mashed and then layered with a can of tuna and some olives - v lowcheck filling lunch!

I cut them in to chips and roast them with a few sprays of 1 cal spray, a few crunches of salt and pepper out the mills.
I have also made a Butter nut squash cheesey bake, roast the butternut squash, with oinion or leeks - makeup the cheese sauce, pour over, sprinkle so grated cheese - bake for about 20 mins - basically cauliflower cheese but with butternut squash.

Oh it is beleive me - quite stodgy and filling, but very yummy!

I chop it into chips, spray with a couple of squirts of 1kcal oil spray and sprinkle with the following:
Rosemary
Black pepper
Rock salt
smoked paprika
garlic granules
mixed herbs
give it all a good shoogle together in the roasting tin and roast for 20 mins or so at 200 degrees
