Okay - have managed to perfect this to a SS suitable receipe, as most of my receipes are ones I devised that werent too calorie conscious! I mentioned it on a previous thread about butternut squash but thought I'd post the proper recipe!
Butternut Squash Cheesey Bake
Serves 2 = 14 cxs each
1 large Butternut squash, peeled, de-seeded and cut into 1" cubes
1 large red onion
160g half fat cheese = 16
250ml skimmed milk = 4
2 rounded dspn cornflour = 4
1 slice wholemean bread = 4
1tsp mustard
Fresh Parsley
Preheat oven to 200.
Place cubed bntsq in to a casserole dish big enough for 2 people. Roast with a few sprays of 1 cal spray for about 15 mins, add the chopped onion, mix, place in oven for another 15 minutes.
In a pan, over a low-medium heat pour in half the milk and mix with all the cornflour, stir until flour mixed in, add the rest of the milk, add half the cheese and continuously stir until cheese has melted then add the rest of the cheese, stirring continuously and quite quickly, eventually the sauce will really thicken, take off heat and cover.
Blend the bread and parsely to a breadcrumb mixture.
Pour cheese sauce over butternutsqsh and onions and give it a wee stir to roughly mix, sprinkle over the breadcrumb mix and spray 2-3 times with 1 cal spray, put it back in oven at 180 for 20-30 minutes, serve with free veg.

BUT if i was to be lazy can i buy peeled and de-seeded butternut squash?
i can make the cheese sauce to share with their macaroni tomorrow and already have a bag of frozen diced onions! xxxxx

My original fattening recipe includes sweet potato, but I was trying to get it underneath 16 cxs, but if you have the cxs to use - its is divine with potato!!

Enjoy skippy - and yes use prepared butternut squash if you can find it - I dont mind the peeling and deseeding bit

this recipe is lovely x but i cheat when making it;
1 large butternut squash
1 red onion (small)
1 pack of cheese sauce mix (40g) = 6cx
275ml milk = 4cx
80g half fat cheese = 8cx
Salt and pepper to taste x
If you use cheese/milk as ur Everyday Bonus, its 14cx for the whole thing, or 7cx between two people x
It tastes absolutely gorgeous

x i make broccoli and cauliflower bake the same way x

Glad you enjoyed it!! Another we tip - for a few extra checks, you can throw in some chopped up (fat trimmed) smoky bacon or turkey rashers

My full fat recipes includes Orkney full fat cheddar, the btnsh, sweet pots, and maple cured bacon. But 1 serving is probably going to be a SS daily allowance lol!! And I wonder how I put on weight!!

That sounds awesome!! I love butternut squash, I have one in the house so will have it through the week, may change some of the cheese for low fat philly though see if i can bring the points down a bit i'll let you know if it comes out ok
