1 onion
3 cloves garlic
1 red pepper
1 butternut squash
1 tin chopped tomatos
2 chicken stock cubes
1/2 teaspoon cajun spice
1 chilli
Salt and pepper to taste
Chop Onion and crush garlic, saute in a pan
Chop butternut squash and red pepper and boil in water with stock cubes until soft
Add Onion and garlic
Add cajun spice
Chop chilli into small piesces and add
Add 1 tin chopped tomatos
Allow to simmer for 10 minutes then blend unitl smooth
Gives a spicy soup with a smooth texture and a beautiful colour
I'll be making ine into approx 4 - 6 seperate portions and freezing for those days when I need to save a few checks.
