Full Version: Oriental Chicken Noodle And Veg Soup

I went out on Thursday and had chicken ramen noodle soup and got to thinking I could make it myself. I just had a play about with what I had in the house and am quite pleased with the results so thought i would share smile.gif I was making one portion and actually ended up making enough for 2 and ended up halfing the checks I thought I was going to use biggrin.gif - it looks like a lot of stuff but it took just over 10 mins to make

1 x 150g chicken breast
1/2 cake noodles
1/2 pack any stir fry pack (I used Sainsburys mushroom)
3-4 baby sweetcorn chopped
6 Mange tout
1/2 a pepper cut into strips
1 x knorr chicken stock cube
2 x clove garlic (i love the stuff, but you dont have to use this much)
1 x 1/2 tsb tomato puree
1/2 tsb ground ginger
1/2 a chilli
1/2 tsp smoked paprika
soy sauce to taste (i used indonesian sweet soy sauce)
couple of squirts of 1cal spray oil

Chop up your chicken into strips and fry with the garlic
Whilst the chicken is cooking make up your stock cube with 1 pt water
Mix the tomato puree, ground ginger, chill, smoked paprika and soy sauce into the stock (it will look a bit murky but it tastes nice)
Pour the stock into a pan and bring to the boil
When its boiling add your noodles
When the chicken is almost cooked add your stirfry pack and veggies into the wok and stir fry for about 4-6 mins (i like it quite crunchy)
When the chicken veg and noodles are cooked pour the noodles and stock over the chicken and veg and stir together and enjoy! smile.gif

I worked this out at 12pts and then realised it makes 2 huuuuge portions so it is 6pts a bowl, im going to attempt freezing the other half and see what happens - will let you know if its sucessful

Even the boy liked it and he is NOT a fan of veggies lol he just had the broth and the chicken smile.gif
