Full Version: Mushroom Stroganoff

I just posted this on the online class for those who were asking
thought I'd stick it here too smile.gif it's from no check low check and it's amazing
let me know if you like it!!

For everyone who wants it:

No check mushroom stroganoff

1 small onion chopped
spray oil
115g mushrooms chopped
1 oxo cube (it says veg but I use chicken)
1 dessert spoon tomato purée
pinch of thyme ( I just use mixed herbs)
2 heaped tablespoons of fat free fromage fraise
black pepper and chopped parsley for seasoning (I don't use either)

1. Cook onions in pan with spray oil add water if needed to stop sticking
2. Add mushrooms, crumble in stock cube, tomato purée and thyme, cook for 1 min
3. Add 100mls water and simmer for 4/5 mins (I don't always do this)
4. Remove from heat and stir in fromage fraise
5. Return to heat and warm gently
6. Add pepper and parsley if wanted

on it's own it's 0 check (using edb calcium allowance) if not count 2 checks, then I usually make 8 checks of rice and it's a huge meal for 8 checks!!

It is also nice without the oxo or tomato puree if you prefer a more creamy taste. lipsmacking.gif

My all time favourite.

I make this sometimes in advance and put it in the fridge. Have it with rice or pasta the next day after a night out or whatever.
Nice and quick with little or no effort.
Great for cutting back on checks to compensate for the night out.

You can add anything to it, beef , pour it over chicken etc. etc. even over a steak as a sauce.

Add a free veg stir fry too, makes a great meal for only your rice/pasta checks.

I decided to do something different with mine yesterday and had it as enchiladas

Cooked the stroganoff and added it to 2x weight watchers wraps, put them in a dish with some cheese sprinkled over the top and stuck in the oven for ten mins,

They were lovely and i'm def doing it again!! Xx

It doesn't matter if I take ot off the heat, slowly stir in ffrais etc it always curdles confused.gif

Hmm I've never had that prob!!

Maybe try creme fraiche instead!? I stick mine in and leave it on the heat bubbling away and it never curdles!?

have roasted veg i cooked in oven last night for lunch gonna re-heat and have brought in a wee container with a tablespoon of the fromag frai for the top!!!!

lipsmacking.gif I love mushroom stroganoff its my all time favourite and i vary what i have with it - rice, pasta or noodles. Im definately going to try it the other ways too. I had also lost the recipe and have been guessing the quantity of ingredients so have copied it out again and i will have it for tea tomor. lipsmacking.gif

I think I must be one of the only people who doesn't like, nay hates, mushroom stroganoff. The thought of it makes me heave - I made it for me and my sister once and we couldn't manage more than a mouthful. I'm not sure if it was because it curdled, but I'm never trying it again!

I really wanted to like it as well, but never mind!

Rebelsue - Thanks for this. I went over yesterday and am trying to claw back the checks. This has given me dinner idea for tonight, had it before and its a yummy low check meal! Does anyone have any other recipes that are simple to make (with stuff you would have in anyway, like for mushroom stroganoff). All ideas welcome to get me to weigh in within my check allowance! x

I tried the strog after the last time sue mentioned it and loved it. Making a real effort to use the cookbooks and try different things from scratch instead of convenience type stuff. I'm obsessed with mushrooms and could have them in every meal of every day!! lipsmacking.gif lipsmacking.gif (except mushroom soup, for some reason I find it revolting! Maybe not too appetising as it's grey!)

I hate mushroom soup - the mushrooms look like slimy slugs - urgh!

I made the stroganoff a few times, but it's just not for me - was eating it for the sake of it

My CM's always said there's no point having something "just cos it's free" if you don't like it much - you need to enjoy what you're eating 2thumbs.gif x
