Hi,

I have been in a food rut for a while now, partly because my oh is not adventerous and would eat the same thing every day if you let him. I love to try new food and tastes but don't bother as it means making more than 1 meal.

I have decided that from today I am going to make the effor to make 1 new receipe every week, wether its a breakfast, lunch or dinner. And i'll post on here the recipe tried and how it tasted.

This week im going to attempt a dessert I have been wanting to try for ages Eton Mess.

If anyone wants to join in with suggestions, ideas or just want get out of your food rut please feel free.

What you need
250g tub Quark skimmed milk soft cheese
Few drops vanilla essence
2 dspn granulated sweetener
125g pot fat-free raspberry yoghurt
225g/8oz raspberries
6 meringue nests

Directions

Beat together the Quark, vanilla essence and granulated sweetener to a thick cream consistency. Stir in the raspberry yoghurt.

Break the meringue nests into chunky pieces and fold into the mixture.

Reserve a few raspberries for decoration then fold remainder into the mixture so they start to break up and streak it with vivid colour.

Divide between 4 serving dishes, garnish with reserved raspberries and serve immediately.

sounds like a great idea, ive made loads from the pep ans other books but i havent made potato and bacon hash recently so im making it this week 2thumbs.gif

Yeah im a bit the same, eat the same things every week!

This week I made Thai Curry which was lovely, also tonight i made spicey tomato pasta with chicken in it and it was lovely too!!

Gonna dig out the books and try some new things!! mmmmmm food xx

will defo be having a wee peak as I am allways looking for new recipes!! I will post any new meals I try too!!

I made the Thai curry too and it was delish. I may try making rissoto this week.

I've done the Eton Mess before, it's v nice. And on Saturday, I attempted the SS chicken korma for the first time, rather than just digging out some usual thing, and it was lovely.

But I did have a small kitchen disaster when I realised I'd used condensed milk rather than evaporated... Am trying not to think about those extra sweet calories!!

Might try something else different this week too.

souns like everyone is dusting down the recipe books, its great to see everyone's ideas, hopefully this will give my food diary a good shake up!!!

Planning a dinner tomorrow for myself and oh as dd will be staying at her Grans. So the Eton mess will be on the menu for dessert. Just gonna have a sift and see if I can come up with something different for the main course lipsmacking.gif

Think I have the main course, will it matter if I change the korma to tikka masala paste ( i dont want to buy another jar !!)????

A healthy take on a Korma - try it today!

Per serving, serves 4

Mild and awesomely aromatic, this dish is delightful and light!


Directions

Heat a non-stick wok. Spray with half the oil. Add the chicken and stir fry for five to ten minutes.

Add the onions, toss well and then cover with a lid. Fry for three minutes, adding a splash of water to the pan if necessary.

Now stir in the Patak’s Korma Paste and toss well. Add 2 tbsp water and the Quark, stir well and simmer gently for five minutes.

Meanwhile, spray the remaining oil in a saucepan. Fry the mushrooms for five minutes, seasoning to taste. Microwave the rice for 90 seconds and add to the pan with the spinach. Toss well, season and serve with the chicken.


What you need
450g skinless, boneless chicken breasts, diced
1 onion halved and finely sliced
4 tbsp Patak’s Korma Paste
150g Quark cheese
225g button mushrooms, halved
1x 250g pouch Patak’s basmati rice
10 sprays one cal olive oil
200g baby spinach leaves
Sea salt
Black pepper

saute 1 trimmed and diced rasher of back bacon with 1 small chopped leak in a pan sprayed with oil,

add 125gm cubed chicken breast,150ml chicken stock and 1 tsp honey.

simmer until chicken is cooked through,stirring frequently.

add chopped parsley and serve with 200gm potato or 45gm dry weight boiled rice,and no check vegetables.

potato may be parboiled,thinly sliced,placed over chicken and browned in a hot oven or under the grill.

Lovely looking recipes!

I've been making a really easy quorn curry. I 'fry' some chopped onion and add a package of quorn chunks (500g pkg I think it is), then add two tins of tomatoes and a pinch of sweetener. Next add curry powder (no check) or curry paste (checks) to suit your taste and simmer for about 10 mins.

It's really nice if you like quorn. I eat it with some boiled rice or a healthy living mini naan bread lipsmacking.gif

I was gonna ask you this week what this St Davids chicken was, sounds yum!! think i'll give it a try next week maybe xx

Wll my first week trying to get out of the food rut didn't quite happen, think it needs a bit more planning. As im off this week I have time to experiment on DD for lunch, so im going to pick a recipe and see if she likes it, will have a look for some light lunch ideas.

Just Had a lovely yoghurt and all from eb, plain low fat yoghurt, chopped up strawberries, blueberries, raspberries, cherries (all on offer at Asda £1) and a sprinkling of oats, just layered in a wineglass, looked so good DD made her own too. lipsmacking.gif

To bulk up serve with free salad.

Just found this, think I'll give it a go sounds tasty and you can make it individual which will suit DD tastes. And its always stuff you can throw together from the fridge!!
