Can anyone recommend some amazing veggie soup recipes? Followed a recipe in a book for potato and lentil and it was horrible!

I'm a big fan of the butternut squash one in the SS book - just a b-nut squash cut up with an onion and seasoning and anything else you want to add. Simmer it for about 30-45mins. Makes a nice thick soup, and v tasty too.

Hi
boil 35g of red lentils with chopped onion, carrot and celery in 250ml of water. I don't bother with the celery in 250ml water. Crumble half stock cube (chicken or veg) and simmer for 20-30 minutes. Add extra water if required.
it is really nice. I made it last night but never managed to get any as hubby had scoffed it all

You would just have to count checks for lentils and stock cube. Check the packets to tell you the cals. But it is usually about 4-5 checks

I made curried veg soup last night. I had bought a small bag of chopped mixed veg and added that to the pot along with some peppers i had sliced, then 2 veg cubes, salt and pepper and some medium curry powder, once it was all cooked i blitzed it cause i like it all smooth, and iv taken it to work with me today for lunch and was yummy!

How weird Ive just made soup there lol
I made Leek and Tattie - just my own not from the book and the other was just tin of chopped tomatoes, 1/2 courgette, 2 sticks celery and 4 carrots thrown in the pot with water and a veggie stock cube.
I am trying to be good cause its my birthday tomorrow and I have done nothing but eat and drink all weekend
