I have a large Marrow y_whistle.gif ...never ate marrow before,what do you do with yours?

My mum used to cut it in half - stuff it with spicy turkey mince and bake it in foil. Right near the end she used to whack on some low fat cheese and melt it.

Was pretty tasty as I recall smile.gif

Not sure if marrow is a similar texture to butternut squash? you could cut it into chunks, bit of spray oil and some spices and roast it?

Hi Jean,

Found a site for you with marrow recipes. The first recipe, Marrow with tomato and onion, could easily be turned into a no-check, low-check recipe. Have fun! laugh.gif

Blooming heck! who would have thought you could do so many things with a marrow lmao - a seriously under-rated vegetable I think

We grow courgettes, which are the marrow family and eat them a lot:

Stuffed Courgettes: part boil courgettes for 5 mins, take out the middles and stuff with bousin light cheese, grill med heat until cheese is slightly brown.

Courgettes risotto: Onions,garlic,spray oil,sweat in pan, add courgettes cook for 5 mins, add glass of white wine and some chicken stock, simmer, add arborio rice and cook until rice is ready, you might have to top up with stock if the rice gets to dry then add spoon of fromage frais Yum yum! I also use this sauce on top of pasta

The sauce freezes well but don't add the fromage frais.

I also add corgettes to stir fries I could go on for ever I love them 2thumbs.gif Sorry I don't weigh when it comes to veggies!!

without sounding dumb -how would i take the middle out of the courgette?

Slice it in half lengthwise and carefully scoop it out. smile.gif

I love stuffed marrow, usually with either a bolognaise or a chilli lipsmacking.gif
