Pumpkin Soup

Whip up this quick and easy pumpkin soup, great for the whole family.

Ingredients

  • 1 tbsp olive oil
  • 2 onions chopped
  • 2 garlic cloves chopped
  • 800g chopped pumpkin
  • 100g red lentils
  • 5 thyme sprigs
  • 1L vegetable stock
  • Pinch salt
  • 50g crème fraiche
  • 4 small wholemeal bread rolls

Directions

  1. 1. In a pan, heat the oil and fry onions until golden. Stir in garlic, squash, lentils, thyme and stock. Season and cover. Simmer for 25 minutes.
  2. 2. Once cooked, add crème fraiche and blitz with hand blender.
  3. 3. Serve with a spoonful of crème fraiche and wholemeal bread roll.
