Lasagna with beef and tomato sauce

Italian Sausage Rice Bake:

  • 8 Highland Game Venison Sausages
  • 300g Brown Rice
  • 3 Red peppers
  • 350g Mushrooms
  • 450g Vine tomatoes
  • 470g Light lasagne sauce
  • 100g Cheddar Cheese
  • Salt and Pepper


  1. Method
  2. Preheat the oven to 200oC/400oF/Gas Mark 6.
  3. Cook the rice as instructions on the pack.
  4. Meanwhile chop the sausages into 4 pieces.
  5. In a large frying pan or wok, brown the sausage pieces in a little olive oil drain and transfer to a rectangular baking dish.
  6. Chop the peppers into small chunks - add these to the sausages in the dish.
  7. Cut in the mushrooms into slices.
  8. Gently cook them with a little olive oil in the frying pan and then add to the dish.
  9. Put the cooked rice in the dish with the other ingredients, season with salt and pepper and mix well, pour over the lasagne sauce.
  10. Slice the tomatoes thinly and place on top of the rice mixture in the dish.
  11. Sprinkle over the grated cheese, put into the oven and cook for 30 minutes - until golden and piping hot - then serve.
