Breakfast Muffins

Got a sweet tooth? Try these delicious easy and quick to make breakfast muffins to satisfy your taste bud and provide you with a healthy start to your day.

Ingredients

  • 175 g 0% fat Greek Yoghurt
  • 100 g self-raising flour
  • 100 g wholemeal flour
  • 4 tbsp honey
  • 200 g porridge oats
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 ripe bananas mashed
  • 2 large eggs
  • 75 ml skimmed milk
  • 3 tbsp coconut or vegetable oil
  • 100 g blueberries
  • 60 g seeds

Instructions

  1. Heat oven to 180°C/160°C fan. Line a muffin tray with 12 muffin cases.
  2. Mix the dry ingredients together. Create a well in the middle and pour in the wet ingredients. Mix gently with a wooden spoon until combined.
  3. Fold in the berries and seeds until combined.
  4. Divide between 12 muffin cases and bake for 25-30 minutes until risen and golden brown on top.
