- 1. In a blender, blitz together 2 bananas with the eggs, oats, baking powder and salt until combined.
- 2. Wipe a frying pan or hot plate with rice bran oil and bring to a medium heat, add two separate ladles of batter into the pan, making two round pancakes
- 3. Fry on one side until golden brown and bubbles start to appear on the surface then flip them over. Cook on the other side until golden.
- 4. Serve the pancakes with the remaining banana, sliced, and drizzle with honey.
