Cheese and Onion Potato Skins

  • 1. Scrub the potatoes and either cook them in the microwave or bake in a preheated oven at 200C (400F gas mark mark 6) for about an hour until tender.
  • 2. Once cooked slice the potatoes in half length ways and scoop out the flesh just leaving a thin layer of potato inside.
  • 3. Mix the grated cheddar with the chopped spring onions and tomatoes and season to taste.
  • 4. Pile the mixture into the hollowed out skins and cook them under a preheated grill for 5 mins until bubbling and golden brown on top.
  • 5. Serve piping hot.
