Chicken and Red Wine Casserole

Method

  • 1. Finely chop the onions and sweat in olive oil or butter.
  • 2. Chop cook the chicken and bacon until cooked through and brown. There needs to be a little fat on the bacon to thicken the sauce.
  • 3. Chop carrots celery and potatoes.
  • 4. Place in the slow cooker with the flour a chicken stock cube 4 cloves garlic bay leaves and thyme. Season with pepper and a little salt.
  • 5. Add the red wine and top up with water to the level of the mixture.
  • 6. Cook for 6 hours.
