- 1. Heat the oil in a flameproof casserole dish add the chicken and fry until lightly browned on all sides. Remove the chicken from the pan with a slotted spoon and set aside.
- 2. Add the vegetables to the pan and fry for 5 minutes or until softened.
- 3. Stir in the flour and gradually add the stock the remaining ingredients and removed chicken stirring thoroughly.
- 4. Bring to the boil cover and simmer gently for 45 minutes stirring occasionally. Sprinkle with parsley and serve.
