Easy Chicken Lasagne

Swap mince for chicken in this easy chicken lasagne which will satisfy the whole family.

  • Spray oil
  • 350 g ready to cook diced vegetables (e.g. onion, carrot, swede)
  • 500 g skinned chicken breast (cubed)
  • 450 g passata
  • 60 g extra light soft cheese
  • 200 g baby leaf spinach
  • 6 fresh lasagne sheets
  • 1 x 470g jar light white lasagne sauce
  • 1 tbsp grated Parmesan
  • freshly ground black pepper
  1. Preheat the oven to 200C, gas mark 6.
  2. Lightly spray a large pan with oil and cook the vegetables over a medium heat for 5 minutes.
  3. Add the chicken and cook, stirring until browned all over.
  4. Add the passata an cook for 5 minutes until slightly reduced, then stir in the soft cheese and spinach. Season with black pepper.
  5. Transfer half the mixture into a rectangular ovenproof dish and cover with 3 sheets of lasagne.
  6. Spoon half the light white sauce over the pasta.
  7. Pour over the rest of the chicken mixture and cover with the remaining pasta.
  8. Spoon the white sauce over the top and sprinkle with Parmesan.
  9. Bake in the preheated oven for 25-30 minutes until bubbling and golden brown.
  10. Serve with No Check salad or vegetables.
