High Fibre Carrot Cake Muffins

Method

  • 1. Preheat oven to 200C Gas Mark
  • 2.
  • 3. Chop the sultanas and place in a mixing bowl with the All Bran sweetener orange squash water and carrot.
  • 4. Leave to stand for 1 hour.
  • 5. Stir in the flour baking powder mixed spice and egg.
  • 6. Mix thoroughly and spoon into 6 muffin tins greased with Fry Light or paper muffin cases.
  • 7. Cook in the oven for 15-20 minutes until firm to the touch.
  • 8. Remove from the oven and serve warm.
