Mixed Rainbow Fried Rice
- 1. Heat 1 tbsp sunflower oil in a large wok or frying pan.
- 2. Then stir-fry the lardons over a high heat for 3-4 minutes. Add the spring onions garlic and peppers and continue stir- frying for further 3-4 minutes.
- 3. Add the rice and soy sauce and continue stir-frying for 3-4 minutes or until piping hot.
- 4. Remove from heat season well with freshly ground black pepper and serve immediately.
