- 1. Peel pumpkin remove seeds and fibrous bits cut flesh into bite size chunks.
- 2. Fry sliced onion in large pan for 10 minutes until golden.
- 3. Stir in ginger and cinnamon and chicken pieces cook for 5 minutes turn chicken to brown on all sides.
- 4. Add tomatoes sugar and harissa season and stir.
- 5. Add chickpeas and pumpkin 5 tbsp water.
- 6. Cover and cook on hob for 20-30 minutes. Watch it doesn't go dry add more water as needed.
- 7. Stir in coriander before serving.
