Mushroom and Goats Cheese Pasta

  • 1. Boil the pasta.
  • 2. Whilst the pasta is cooking fry the mushrooms and garlic until golden.
  • 3. Add the tinned tomatoes and simmer for 2 minutes season with the Italian mixed herbs.
  • 4. Roughly chop the goats cheese and add to the pan along with the spinach and sun dried tomatoes.
  • 5. Drain the pasta and add to the sauce mixing well before serving.
