Mushroom, Prawn & Spinach Noodles

  1. Heat the oil in a large frying pan or wok, add the prawns and mushrooms and stir fry for 3 mins.
  2. Add the spring onions, ginger and garlic and stir fry for 2 mins.
  3. Add the stock and hoisin sauce and bring to the boil.
  4. Add the noodles, stir well and add the spinach and beansprouts.
  5. Serve in bowls.
