Nectarines with Hot Raspberry Sauce

  • 1. Run a knife around the centre of each nectarine. Twist firmly to separate and remove the stone.
  • 2. Place the raspberries (reserving a few for decoration) in a food processor with the sugar a grated orange rind and the juice of the orange. Process until smooth and sieve to remove the seeds.
  • 3. Tear four large pieces of foil. Place two nectarine halves on each piece and spoon over sauce. Wrap up loosely but securely. Barbecue over medium coals for 10-15 minutes.
  • 4. Serve with a sprinkling of nuts and fresh fruit.
