  • 1. Heat some water in a large pan. When boiling add the pasta turn down to a simmer and cook as per the instructions (usually ten minutes).
  • 2. Meanwhile fry the onion in olive oil until it is soft. Add the bacon and fry until cooked. Add the chilli and the rosemary and stir in.
  • 3. Add the tomatoes and tomato puree and stir. Heat through. Taste and add salt and pepper if required.
  • 4. When cooked drain the pasta and add to the bacon and tomato mixture stir well. Stir in the chopped parsley.
  • 5. Serve with grated parmesan.Without parmesan this would be 581 cal per serving. Without cheese and just 5 ml olive oil it is 540 cal per serving.
