Poached Pears & Blackberries

  • 1. Peel the pears but don't remove the stalks. Place them in a sauce pan with the lemon zest and juice half the blackberries the apple juice and caster sugar. Heat until simmering then cover and cook gently for 20-25 minutes until the pears are tender turning them once.
  • 2. Remove the pears from the liquid and cool for a few minutes. Halve each core with a tsp or melon baller and transfer to four dishes.
  • 3. Strain the liquid through a sieve into a pan. Add the remaining blackberries and warm gently.
  • 4. Serve the pears and blackberries with yogurt.
