- 1. Chop up onion and gently fry (olive mist spray or dry) for about a minute.
- 2. Throw in chopped small pieces of potato and leek pour in stock.
- 3. Add pepper, ginger,and garlic to suit your taste and boil with lid on until potatoes are soft (depends on potato chunk size anything from 10 mins to 30 mins).
- 4. Put in food processor and blitz (not too long if you prefer your soup a bit chunky!).
- 5. Return to heat for a couple of minutes and serve.
