- 1. Roughly chop the onions corguette and pepper and saute them in a saucepan with a few sprays of FryLight until soft.
- 2. Add the tomatoes and season to taste with the herbs and black pepper. Leave to simmer.
- 3. While the ratatouille's simmering cook the pasta as per the instructions. Once cooked drain and stir it into the ratatouille along with half the cheese.
- 4. Transfer the mixture to an ovenproof dish top with the rest of the cheese and place under a medium/hot grill for 3-4 minutes.Traditional ratatouille recipes call for aubergine but I don't like it so I leave it out. For a lower calorie/fat meal simply serve the ratatouille with rice or a jacket potato!
