Method

  • 1. Hard-boil cool and peel the eggs.
  • 2. Take 4 large low-fat sausages remove skins mash and mix in 1 tsp mixed herbs.
  • 3. Blend the bread into breadcrumbs.
  • 4. Fold a quarter of the sausage mixture around each egg.
  • 5. Dip each egg into the milk and roll in the breadcrumbs.
  • 6. Bake on a rack for 30-40 minutes at 180C/gas 4 until crumbs are crisp.
  • 7. Allow to cool and serve.
