Smoked Salmon Risotto

Method

  • 1. Fry the onion in a small amount of oil until browned.
  • 2. Add the rice and stir well until the rice becomes translucent around the edges.
  • 3. Slowly add the stock stir and bring to the boil simmer for 15 minutes.
  • 4. Add the mange tout and salmon simmer for a further 5 minutes continuously stirring.
  • 5. Add juice the lemon juice stir well and serve.
