- 1. Fry the onion in a pan with the knob of butter (or use fry light if you have it) until the onion is soft.
- 2. Add the sweet potato and curry paste stir together for a minute or so until the veg is evenly covered by the paste.
- 3. Pour in the vegetable stock and chopped tomatoes and allow to simmer for 15 minutes or until the sweet potato is tender.
- 4. Stir in the yogurt chickpeas and spinach. Allow to simmer for a few more minutes and then serve with rice.
