Sweet Potato & Lentil Soup

Method

  • 1. Put the curry powder into a large pan and cook over a medium heat for 2 minutes then add the olive oil
  • 2. Add the onions apple garlic coriander and ginger stirring every so often for about 5 minutes.
  • 3. While cooking peel and chop the sweet potatoes and add to the pan with the stock lentils milk and seasoning. Simmer for 20 minutes
  • 4. Add in the lime just and mix well using a hand blender. Serve with fresh coriander on top.
