Tuna Cakes

Method

  • 1. Chop the potatoes into small chunks and boil for 20 mins until soft.
  • 2. Once cooked mash the potatoes and put in a bowl to cool.
  • 3. Mix the tuna lemon juice and rind into the potatoes and season to taste.
  • 4. When cool shape into six cakes and roll in the breadcrumbs.
  • 5. Baking in the oven for 20 minutes until golden.
  • 6. Serve with salad gherkins and sweet chilli sauce.
