1. Mix the turkey mince finley chopped onion herbs (dried or fresh) and crushed garlic together in a large bowl and season well.
2. Bind together with the egg.
3. Line a 2lb loaf tin with greaseproof paper and add half the mince mixture slice the tomato and courgette into fairly thick slices and layer over the mince.
4. Layer the rest of the mince on top and press down well. Cover with foil and place the loaf tin in a tray of boiling water and cook in a 190 c oven for about 1 1/4 - 1 1/2 hours.
