Turkey Meat loaf

  • 1. Mix the turkey mince finley chopped onion herbs (dried or fresh) and crushed garlic together in a large bowl and season well.
  • 2. Bind together with the egg.
  • 3. Line a 2lb loaf tin with greaseproof paper and add half the mince mixture slice the tomato and courgette into fairly thick slices and layer over the mince.
  • 4. Layer the rest of the mince on top and press down well. Cover with foil and place the loaf tin in a tray of boiling water and cook in a 190 c oven for about 1 1/4 - 1 1/2 hours.
