- 1. Heat the oil in a large saucepan and saute the onion until soft.
- 2. Add the pepper and continue to cook for 3-5 minutes then add the tomatoes tomato puree stock and chilli if using.
- 3. Bring to the boil then reduce the heat and simmer for 10 minutes.
- 4. Allow to cool slightly then transfer to a blender and puree until smooth.
- 5. Return to the pan and reheat until warm.
- 6. Season to taste then stir in the coriander
