Method

  • 1. Heat the oil in a large saucepan and saute the onion until soft.
  • 2. Add the pepper and continue to cook for 3-5 minutes then add the tomatoes tomato puree stock and chilli if using.
  • 3. Bring to the boil then reduce the heat and simmer for 10 minutes.
  • 4. Allow to cool slightly then transfer to a blender and puree until smooth.
  • 5. Return to the pan and reheat until warm.
  • 6. Season to taste then stir in the coriander
