Method

  • 1. Preheat oven gas mark 4/180. Line a large loaf tin with greaseproof paper.
  • 2. Sift the flour and spice into a bowl and rub in the low fat spread with fingers until combined and add the sugar and mix well.
  • 3. Mash bananas with the lime juice then beat in the eggs.
  • 4. Fold the banana and egg mixture into the flour and mix well.
  • 5. Pour into loaf tin and bake for 1 hour.
  • 6. Once baked, stand to cool for 15-20 minutes then drizzle over the honey.
