Banana muffins

Method

  • 1. Combine the sugar porridge oats and wholemeal flour in a large bowl.
  • 2. In a separate bowl mash the banana with the yoghurt, egg whites, lemon juice and Fry Light.
  • 3. Make a well in the centre of the flour and add the banana mix and combine. Fold in the berries.
  • 4. Divide into 12 muffin cases and bake for approx 20 minutes, until the tops have turned golden brown and a skewer into one remains clean.
  • Heat the oven to 180 C
