1. In a blender, blitz together 2 of the bananas, the eggs, oats, baking powder and salt to a smooth, creamy mix.
2. Wipe a frying pan or hot plate with rice bran oil and bring to a medium heat; add two separate ladles of batter into the pan, making two round pancakes
3. Cook until golden brown and bubbles start to appear on the surface then flip them over. Cook on the other side until golden.
Repeat until all the mixture is used.
4. Serve the pancakes with the remaining banana, sliced, and drizzle with a little honey.
As an option, spinrkle with crushed walnuts, toasted pine nuts or seeds.
