Method
- 1. Boil the potatoes and once done, drain and mash with a little skimmed milk and season to taste.
- 2. Steam or microwave the broccoli until just tender. Drain and leave aside.
- 3. Spray a pan with the oil and bring to a medium heat. Add the chicken and brown off.
- 4. Transfer the chicken to an ovenproof dish adding the broccoli.
- 5. Take a saucepan and add the cornflour. Gradually add the milk whisking as you go
- 6. Add the stock cube and then bring to the boil, stirring continuously until the sauce thickens.
- 7. Remove from the heat and fold in the mayonnaise. Once done add the sauce to the dish with the chicken and broccoli.
- 8. Pre-heat your oven to 200°C/Gas Mark 6
- 9. Spread your mashed potatoes over the chicken mixture and place in the oven for 15 minutes.
- 10. Finish browning off the potatoes under a moderate to hot grill.
- 11. Serve with additional No Check vegetables.
