- 1. Dice the chicken breasts place in a bowl and pour over the yogurt. Add most of the coriander lime zest and juice and chilli. Cover the bowl with cling film and marinate in the fridge for 1 hour. Heat a griddle or frying pan over high heat with the oil and add the chicken. Cook over a medium heat for 8 to 10 minutes on each side until thoroughly cooked.
- 2. Slice the chicken and serve sprinkled with the remaining coriander and lime wedges.
