Chocolate Orange Pots

Dark, rich and totally scrumptious, serve these classy little desserts at the end of a meal and you'll really impress your guests. And they'll never suspect you're trying to lose weight...

  • 60 g Bitter plain chocolate
  • 2 tsp Cocoa powder
  • 2 tbsp Hot water
  • 2 Medium eggs
  • 1 tbsp Caster sugar
  • 1 tsp Butter
  • 4 tsp Low-fat fromage-frais
  • 1 orange (Grated zest only)
  • ½ orange ` (Juice only)
  • Orange zest (to decorate)
  1. Break the chocolate into pieces and place it in a basin set over a saucepan of water.
  2. Blend the cocoa powder with the hot water and add to the chocolate in the basin.
  3. Heat gently until the water in the pan below is simmering.
  4. When the chocolate starts to melt, stir until it is thoroughly blended with the cocoa and you have a smooth, thick mixture.
  5. Remove from the heat.
  6. Separate the eggs into 2 clean bowls.
  7. Beat the egg yolks and then stir into the melted chocolate.
  8. Replace the pan over the heat and, with the water below simmering gently, stir the chocolate mixture until it thickens.
  9. Add the sugar, butter, orange zest and juice and stir well.
  10. Whisk the egg whites until they stand in stiff peaks.
  11. With a metal spoon, fold them into the chocolate mixture in a figure-of-eight movement until thoroughly incorporated.
  12. Transfer to 4 small ramekin dishes or pots and chill in the refrigerator.
  13. Just before serving, decorate each pot with a swirl of fromage frais and some thin strips of orange zest.
