- 1. Make 3 or 4 deep cuts in the surface of the chicken breasts.
- 2. Mix the cheese, lime zest and juice, garlic, and coriander in a large bowl. Add the chicken and coat well.
- 3. Cook under a medium to hot grill for 15 - 20 minutes, turning once until juices of chicken run clear when tested with a skewer.
