Crusted Salmon

Salmon oat


Preheat the oven to 200⁰C.

  1. Blitz the oats, chopped herbs and grated lemon zest in a blender until it resembles breadcrumbs.
  2. Coat the salmon fillets in the beaten egg and toss through oat mixture.
  3. Lay salmon fillets on a baking tray and brush lightly with oil.
  4. Bake in preheated oven for 20 minutes until oat topping is crisp and golden.
  5. Serve on a bed of spinach or with seasonal veg.
