Method

  • 1. Heat a frying pan and fry the bacon until cooked through.
  • 2. Add the mushrooms and tomatoes to the pan once the bacon is nearly cooked.
  • 3. Meanwhile heat a small pan of boiling water and poach the egg for 2-3 minutes.
  • 4. While the egg is cooking heat the beans through in the microwave and toast the muffin.
  • 5. Once everything is cooked to your liking put the toasted muffin halves on a plate and top with the beans, tomato, mushrooms and bacon.
